New restaurant led by Chef Michael Potters teems with seasonal specialties and local flavours
TORONTO, Jan. 27, 2012 /CNW/ - Hockley Valley Resort's new signature restaurant, cabin, is introducing a new standard for regional cuisine in the Hills of Headwaters with a weekly rotating menu and a permanent menu dedicated to fresh ingredients and local fare.
Under the direction of Chef de Cuisine Michael Potters, the new 2,600 square foot restaurant is named in honour of the first structure built on the property in 1865. The open-concept restaurant design blurs the lines between kitchen and dining room, with seating for up to 70 guests, including an interactive Chef's Table in front of Chef Potters' cooking area, a semi-private dining area, and an intimate dining room.
"The inspiration behind the rotating menu is to offer guests a truly seasonal culinary experience," said Potters. "Our proximity to local farmers and food purveyors, combined with our bountiful on-site garden allows us to serve the freshest possible food with a low ecological footprint."
Chef Potters will be supported by Hockley's new Director of Restaurants, Sommelier Corey Ladouceur.
