Calgary TELUS Convention Centre Welcomes Executive Chef
CALGARY, Oct. 2, 2012 /CNW/ - Selection, quality and presentation of food can make or break even the best-planned event. Fortunately, the Calgary TELUS Convention Centre's exclusive catering partnership with the Calgary Marriott Downtown produces consistently inspired and inspiring cuisine. And now, thanks to Executive Chef - Eric Larcom, the CTCC is attracting clients due to the quality of its meals as well as its outstanding facilities. It is a winning combination with Larcom adding excitement and flavour to meetings and conventions, one dish at a time.
Growing up in New York State, Larcom developed an appreciation for fresh food at an early age. "I did a lot of hunting and fishing with my dad in Western New York and my parents taught me how to create delicious food using local, seasonal fruits and vegetables," says Larcom. "Now in Calgary, I'm really enjoying the wide variety of ingredients available in and around the area."
Beginning his career at a top fifty Conde Nast property in Arizona, Eric spent five years planning and executing a new culinary style for Marriot hotels in Arizona and Florida. Learning the restaurant operations and banquet experience side of the business, Larcom worked for James Beard award winning chef Melissa Kelly at her Tucson restaurant. He also became Chef de Cuisine at JW Marriott Starr Pass restaurants where he quickly turned around the whole philosophy of the operations by introducing a "fresh is better than canned" approach.
Eric's style of using fresh local and seasonal ingredients has already been noticed by CTCC clients. Rod Cameron, Executive Director, Convention Centres of Canada said: "Our organization met in Calgary in July and we were all both pleasantly surprised and appreciative of the outstanding food that Eric's team created for us".
While clients are raving about Larcom's creations, the entire CTCC team believes the new culinary changes will help put Calgary on the map for North American and International meeting planners. "Eric has done an amazing job in creating quality dishes that highlight fresh local ingredients," says Heather Lundy, CTCC's Director of Marketing.
