Ingredients: ------------ 1 1/2 cups all-purpose flour 3 1/2 teaspoons baking powder 1 teaspoon salt 1 1/4 cups vanilla soy beverage in Tetra Pak cartons 1 egg 3 tablespoons butter, melted 1 cup blueberries 2 tablespoons vegetable oil Directions: ----------- Sift flour, baking powder and salt into a large bowl. Whisk soy milk, egg and melted butter together. Make a well in the centre of the dry ingredients and pour milk mixture in. Fold ingredients together. Fold in blueberries. Heat a skillet and add oil. Scoop approximately 1/4 cup of batter onto the skillet. Ingredients: ------------ 4 medium tomatoes, halved 2 red peppers, halved and seeded 1 small onion, large dice 4 cloves garlic, peeled 3 tablespoons olive oil 2 sprigs thyme 1 cup Tetra Pak packaged vegetable broth Directions: ----------- Preheat oven to 350 degrees. Toss tomatoes, peppers, onion and garlic on a roasting tray with oil, salt, pepper and thyme. Roast for approximately 40 minutes or until vegetables are brown. Let cool slightly and peel skin off of peppers. Puree roasted vegetables in blender in batches with stock and add to pot (for smoother texture use a ricer). Bring to the boil.
