Media Advisory - George Brown College Team Makes Local Food a Year-Round Experience
TORONTO, Feb. 10, 2012 /CNW/ - On Monday, George Brown College will unveil results of the Chef School Preserves Ontario Initiative. With support from the Ontario government, George Brown College received a grant from the Greenbelt Fund for this innovative project. The Greenbelt Fund and its program the Broader Public Sector Investment are part of an initiative that is fostering change at the production, distribution and operation levels to increase the use of local food and change food procurement practices.
The local food initiative at George Brown Chef School has resulted in the development of a variety of preserved food using Ontario produce. Items include pizza sauce, pickled beets, spicy cherry peppers and an assortment of jams, jellies and compotes for use by educational institutions, public sector partners and the private sector. These preserved Ontario foods are being used by a number of the college's community partners, including St. Michael's Hospital, The Fairmont Hotel and Local Kitchen, in collaboration with Chef School graduate Fabio Bondi.
Be the first to try the variety of preserved Ontario food such as micro-pizzas with preserved Chary Farms tomato sauce, fresh Slegers Greens basil and Santa Lucia buffalo mozzarella; Local Kitchen spicy cherry peppers filled with seasoned soft cheese; Frog Pond Farm Cabernet Franc wine jelly served with house-made biscuits and aged Monforte Tosacano cheese; Northern Ontario wild blueberry compote served with house-made scones; and much more.
