LONGUEUIL, QC, Feb. 6, 2013 /CNW Telbec/ - Maple syrup, Quebec's signature product, is known and recognized all over the world as a symbol of Canada and its history. Le Grand livre de l'érable is a new book recently published by Éditions Trécarré and examines maple from every angle. The book is the result of collaboration between the author Philippe Mollé and the Federation of Quebec Maple Syrup Producers, and will quickly become the go-to reference for all things maple.
Leaving no stone unturned, Le Grand livre de l'érable examines maple's legendary history, its production and its products, its use in cooking over the years and presents both traditional recipes and more modern creations conceived by Quebec's Maple Masters. In addition, the book presents maple water in a new light and suggest ways of using it in the kitchen. This has added relevance as maple water will be marketed for the first time in 2013. As a result of research carried out by the Federation and introduction of NAPSI certification, consumers will have the chance to discover pure maple water whose authenticity and quality has been guaranteed.
Philippe Mollé is a strong advocate of producers and artisans, and has introduced Quebec gastronomy to several countries. With this book, he shares his passion for maple, which he considers as among the world's great products: "When the maple trees begin to flow in spring, I feel a great sense of joy every time.
